CityBusiness Staff Report
A Louisiana chef was one of six finalists but he did not win the top honor at the fourth annual Great American Seafood Cook-Off held Saturday and Sunday at the Ernest N. Morial Convention Center.
The title of "2007 King of American Seafood" went to Georgia Chef Tim Thomas.
Louisiana Chef Tenney Flynn, co-owner of Bienville Street-based GW Fins, finished second. Flynn's dish: sautéed American red snapper with melon and mango salad.
The Louisiana Seafood Promotion & Marketing Board presented the chef competition.
On the second day, six finalist chefs from Alaska, California, Georgia, Hawaii, Louisiana and Massachusetts competed for the title of king or queen.
The final challenge involved cooking a home-style dish in 45 minutes or less.
Chefs had to use corn flakes and/or a Michelob Light beer in the dish.
Thomas' winning dish was wild Georgia shrimp ratatouille with boursin and cheese grits.
